  • 1 cup basmati rice
  • 2 cups water
  • 1 tablespoon ghee (clarified butter)
  • 1 teaspoon cumin seeds

  • In a mixing bowl, combine the rava, yoghurt, and water. Mix well and let it sit for 15 minutes to allow the rava to absorb the liquid.
  • Heat oil in a pan and add the mustard seeds and cumin seeds. Allow them to splutter.
  • Add the cashew nuts, curry leaves, grated ginger, and green chilli. Sauté until the cashews turn golden.
  • Add this tempering mixture to the rava mixture and mix well. Season with salt.
  • Grease the idli moulds and pour the batter into them.
  • Steam the idlis for about 10-12 minutes or until cooked through.
